Ingredients to make Sabudana Khichdi
Sabudana – 1 cup
Roasted Peanuts – 1/4 cup
Potato chopped – 1
Green chili chopped – 3-4
Ginger finely chopped – 1 tsp
Black pepper powder – 1/4 tsp
Cumin – 1/2 tsp
Green coriander chopped – 2 tbsp
Lemon juice – 1 tsp
Desi ghee – 2 tsp
Rock salt – as per taste

How to make Sabudana Khichdi
To make Sabudana Khichdi, first clean the Sabudana and wash it with water and keep it aside. After this cut potatoes, green chillies, coriander leaves, ginger. Now put desi ghee in a pan and heat it on medium flame. When the ghee melts, add finely chopped ginger, cumin and green chillies and fry for a few seconds. After some time add chopped potatoes and mix well with the spices and sauté for 2 minutes.

After the potatoes become soft, add sago to the pan and fry it while stirring for at least two minutes. After this pour 2-3 cups of water in the pan and mix it with sago and cook it. Meanwhile, cover the pan and let the khichdi come to a boil. After some time the khichdi will start boiling and its water will start drying up. Meanwhile, add roasted peanuts, black pepper powder and rock salt as per taste.

Mix all the ingredients well with the help of a ladle and cover the khichdi again and cook till the sago becomes soft. After the sago becomes soft, add finely chopped coriander and lemon juice to it. Tasty Sabudana Khichdi is ready, serve it with curd or raita.
